Ingredients
- Gelatin - 0.9 oz
- Water - 8 fl oz
- Light Corn Syrup - 8 fl oz
- Salt - ¼ teaspoon
- Vanilla extract - 1 tablespoon
- Sugar Glaze - 1.4 oz
- Milk - 6 fl oz
- Whipped Cream - 2 tablespoons
- Cocoa Powder - 1⅒ teaspoon
- Vanilla salt - 0.3 teaspoon
- Sugar - 11.3 oz
- Bittersweet Chocolate - 1 piece
Step by Step guide
Step 1
Soak the gelatin in half a cup of water for 15 minutes.
Step 2
Prepare the syrup by mixing 1.5 cups of sugar, corn syrup, salt, and half a cup of water in a small saucepan. Cook over medium heat until the sugar dissolves. Increase the heat and cook until the syrup reaches 240 degrees Fahrenheit on a candy thermometer (approximately 8 minutes). Remove from heat.
Step 3
Slowly pour the sugar syrup into the dissolved gelatin in a thin stream while mixing with a hand mixer on low speed. Gradually increase the speed and whip the mixture until thick, about 15 minutes. Add vanilla and whip for another 30 seconds.
Step 4
Generously dust a baking dish (can be lined with foil) with confectioners' sugar and pour the mixture into it. Smooth the top and sprinkle with more confectioners' sugar. Leave it at room temperature overnight.
Step 5
Once the mixture has set into a sticky mass, invert the dish onto a powdered board and cut into shapes or simple squares of marshmallow. Generously dust them with powdered sugar.
Step 6
Now prepare the cocoa (the proportions given are for one cup of the drink). Bring the milk to a boil, add cocoa powder, sugar, and vanilla, and brew.
Step 7
Place a few pieces of bittersweet chocolate at the bottom of a cup and pour in the cocoa. Top with whipped cream and marshmallow fluff.
