- Cod fillet - 14.1 oz
- Pitted Wild Apricots - 7.1 oz
- Bacon - 7.1 oz
- Scallions - 0.7 oz
- Oranges - 1 piece
- Olive Oil - 1 fl oz
- Thyme - to taste
- White Pepper (whole) - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the cod fillet into uniform pieces measuring approximately 6×6 cm. Season with salt and pepper, sprinkle with thyme, and wrap each piece of fillet around a prune. One prune per piece of fillet will be more than enough.
Step 2
Next, wrap the fillet in thin slices of bacon (preferably lean) and secure the bacon to the fish with a skewer to prevent it from unraveling during baking.
Step 3
Place in a baking dish greased with olive oil, drizzle with more oil on top, and bake for 5–7 minutes at a temperature of 180 degrees.
Step 4
Sprinkle the finished rolls with green onions and orange zest, and serve without any additional sauce.
