Ingredients
- Chopped almonds - 5.5 oz
- Stale Bread - 16.8 oz
- Garlic - 4 cloves
- Olive Oil - 4 fl oz
- Champagne Vinegar - 4 tablespoons
- Raisins - 7.1 oz
- Chicken Broth - 12 fl oz
Step by Step guide
Step 1
Take 400 grams of stale bread without crusts and soak it in cold water for 5 minutes, then gently squeeze it. In a blender, place the garlic and peeled white almonds, and blend well. Add the bread and blend again until it reaches a paste-like consistency.
Step 2
Gradually add 125 ml of oil while continuing to blend until it reaches a mayonnaise-like consistency. Slowly add the vinegar and 315 ml of broth or water until you reach your desired consistency. Blend for 1 minute. Season with salt and refrigerate for 2 hours. If the soup thickens too much in the fridge, add more broth.
Step 3
Heat 2 tablespoons of olive oil in a pan and add the remaining bread, cut into cubes. Fry for 2-3 minutes until golden brown. Transfer to a paper towel.
Step 4
Serve the soup very cold, topped with grapes and croutons.
