- Butter - 0.5 oz
- Onion - 1 head
- Salt - to taste
- Lemon - 1 piece
- Pickled Apples - 6 pieces
- Red Curry Powder - 2 teaspoons
- Chicken Broth - 30 fl oz
- 10% cream - 5 fl oz
- Mint Leaves - to taste
Step by Step guide
Step 1
Melt the butter in a pot over medium heat. Add finely chopped onion and sauté for 10-15 minutes until soft, lightly salting.
Step 2
Meanwhile, squeeze the juice from a small lemon into a bowl. Peel the apples and remove the cores. Cut into small pieces and mix with the lemon juice.
Step 3
Add curry to the onion and cook for 2 minutes while stirring. Then add the broth and apples. Bring to a boil, reduce the heat, cover, and simmer for 30 minutes until the apples are soft. Strain the soup through a sieve, cool it down. Add the cream and lemon juice. Strain again through a sieve and serve, garnished with mint leaves.
