Cold avocado soup with cilantro dressing
Ingredients
- Cilantro - 2.6 oz
- Avocado - 4 pieces
- Chicken Broth - 24 fl oz
- Milk - 5 fl oz
- Shallot - 2 pieces
- Cherry - 1.8 oz
- Chili jam - 0.1 oz
- Sour Cream - 1.8 oz
- Garlic - 2 cloves
- Dessert Yogurt - 1.8 oz
- Orange Bell Peppers - 1 piece
Step by Step guide
Step 1
Cut the avocado into cubes.
Step 2
Finely chop the shallot.
Step 3
Cut the cherries in half and remove the pits.
Step 4
Place the avocado, broth, milk, shallot, cherries, and chili sauce in a blender and blend until smooth. Season with salt and pepper. Pour into another container, cover, and refrigerate for a couple of hours.
Step 5
Prepare the sauce: finely chop the garlic and green pepper (remove the seeds from the pepper). Place all the ingredients needed for the sauce (sour cream, yogurt, garlic, sweet green pepper, cilantro leaves) in a blender and blend until you have a mixture with small pieces of pepper. Season with salt and pepper.
Step 6
Pour the soup into bowls, add a spoonful of sour cream on top, and then 2 teaspoons of the cilantro sauce on the sour cream. Garnish with remaining cilantro leaves.
