Description
Gazpachuelo is a traditional Spanish soup. It is similar to <a href="https://eda.ru/recepty/supy/gaspacho-s-jestragonom-52183">gazpacho</a>, but is based on mayonnaise.
Ingredients
- Malt Vinegar - 1½ tablespoons
- Olives stuffed with lemon - 3.5 oz
- Whole egg - 3 pieces
- Water - 1 qt
- Tomatoes - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Make classic mayonnaise: whisk the yolks with vinegar, then slowly pour in the oil while continuously stirring, season with salt and pepper, and refrigerate. The mayonnaise should be very thick.
Step 2
Remove the pits from the olives and chop them. Peel the tomatoes and dice them finely.
Step 3
Place the mayonnaise in a soup bowl and mix with ice-cold water, adding it in small portions. Add the tomatoes and olives. Serve immediately.
