Description
Almost like okroshka, but instead of kefir, milk serves as the liquid component. However, the soup does need some acidity, which is provided here by rice vinegar, typically used for sushi.
Ingredients
- Radish - 10 oz
- Milk - 15 fl oz
- Rice Vinegar for Sushi - 1 tablespoon
- Cucumbers - 10 oz
- Sugar - 1 tablespoon
- Salt - to taste
- Red Long Chili Peppers - to taste
Step by Step guide
Step 1
Wash the cucumbers, remove the seeds, and cut them into large pieces. Cut the radishes into similar large pieces. Transfer the vegetables to a blender, add the vinegar, cold milk, sugar, a pinch of salt, and red pepper, and blend everything until smooth to create a pureed soup.
Step 2
Serve immediately, garnished with julienned cucumbers and radishes, if you wish to create a play of textures on the plate.
