Ingredients
- Matsoni - 1 qt
- Water - 5 fl oz
- Ayran - 7 fl oz
- Chicken Egg - 1 piece
- Wheat Flour - 0.4 oz
- Dill - 0.5 oz
- Spinach - 0.5 oz
- Parsley - 0.5 oz
- Scallions - 0.5 oz
- Cilantro - 0.5 oz
- Mint - 0.5 oz
- Chickpea - 3.5 oz
Step by Step guide
Step 1
Rinse the chickpeas and soak them overnight.
Step 2
Boil in salted water for about an hour until cooked.
Step 3
Wash all the herbs, dry them, and chop finely.
Step 4
Sift the flour into the matsoni to prevent any lumps.
Step 5
Transfer all the prepared ingredients, except for the chickpeas, to a saucepan.
Step 6
Place over low heat.
Step 7
Heat until the greens darken (about 5–7 minutes), without bringing to a boil. Stir only with a wooden spatula.
Step 8
Cool the soup.
Step 9
Add cold ayran.
Step 10
Add the boiled chickpeas. Serve!
