Ingredients
- Lentils - 5.3 oz
- Tiger shrimp in brine - 8 pieces
- Cucumbers - 2 pieces
- Walnuts - 1.4 oz
- Radish - 4 pieces
- Tomatoes - 24.7 oz
- Sweet Pepper - 10.6 oz
- Spiced Tomato Juice - 5 fl oz
- Meyer Lemon Juice - to taste
- TABASCO® - to taste
- Cilantro - to taste
- Garlic - 1 clove
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 0 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Boil the lentils according to the instructions on the package.
Step 3
Cut the cucumbers into small cubes and the radishes into thin slices. Place the radishes in cold, clean water.
Step 4
Chop the tomatoes and bell peppers into large pieces. Blend them with tomato juice.
Step 5
Strain the puree to remove the seeds and skin.
Step 6
Taste the mixture and add salt, lemon juice, and Tabasco to your liking. Stir well.
Step 7
In a skillet, heat olive oil and add a crushed peeled garlic clove.
Step 8
Peel the shrimp and add them to the skillet. Sauté for 1 minute on each side. Season with salt and pepper.
Step 9
Pour the cooked lentils with the vegetable puree, add the cucumber and crushed walnuts. If the soup is too thick, add more tomato juice.
Step 10
Garnish the soup with slices of radish and sautéed shrimp.
Step 11
Serve with fresh cilantro.
