Cold tomato soup with basil
Ingredients
- Yellow Cherry Tomatoes - 3 pieces
- Garlic - 1 clove
- Scallions - 2 pieces
- Basil - 0.2 oz
- Dry White Wine - 1 fl oz
- Olive Oil - 1 tablespoon
- Tomato Puree - ½ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
- Butter - 1.8 oz
- French Baguette - 1 piece
Step by Step guide
Step 1
Cut the tomatoes into quarters and place them in a blender. Finely chop the garlic, green onions, and most of the basil. Add to the blender. Add the wine, tomato puree, ice cubes, and pour in 2 tablespoons of drinking water. Add the seasonings and blend for 30 seconds.
Step 2
Pour the soup into chilled soup bowls, drizzle with a small amount of olive oil. Tear the remaining basil leaves and sprinkle on top. Serve with warm French baguette and butter.
