Description
France is considered the birthplace of classic soups with clear broth; however, pureed soups are more common here — they are very nutritious and easily digestible by the human body. Nutritionists claim that pureed soup is the perfect dish that is both tasty and healthy at the same time. Consuming pureed soup (without a second course) is a path to a slim figure.
Ingredients
- Lentils - 8.8 oz
- Milk - 8 fl oz
- Ground Black Pepper - to taste
- Butter - 2 tablespoons
- Whole egg - 1 piece
- White bread - ½ piece
Step by Step guide
Step 1
Rinse the lentils, sort them, place them in a pot with cold water, season with salt to taste, and cook until tender for 1.5 hours. Drain the cooked lentils through a colander, then pass them through a sieve. Keep the broth.
Step 2
Place the lentil puree in a pot and set it over medium heat. Dilute with hot milk to a consistency of sour cream; if there is not enough milk, add lentil broth. Add salt, pepper, and half of the butter. Remove from heat and gently stir in the egg yolk.
Step 3
Carefully cut the white bread into cubes. Toast in the remaining butter until golden brown. Serve the soup hot, sprinkled with toasted croutons.
