Description

If the soup turns out too thick, you can reduce the amount of cornmeal. When serving, it would be nice to sprinkle with finely chopped parsley.

Ingredients

  • Coarse Cornmeal - ½ cup
  • Chicken Broth - 3 qt
  • Sliced Processed Cheese - 7.1 oz
  • Salad Potatoes - 3 pieces
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Carrot - 1 piece
  • Onion - 1 piece
  • Vegetable Oil - 1 tablespoon

Step by Step guide

Step 1

Cut the potatoes into cubes. Add them to the boiling chicken broth along with the cornmeal. Season with salt and pepper to taste. Cook for about 10 minutes.

Step 2

Meanwhile, sauté the onion and carrot in vegetable oil until golden. Add to the pot. Cook everything together for another 5 minutes.

Step 3

Then add the cheese. I prefer the kind in jars; it's better. You can choose one with mushrooms or herbs, whichever you like. So, dump it into the pot, wait for it to fully dissolve, stirring gently. Keep it on the heat for another minute, then remove.

Step 4

It's ready. Serve in bowls.
