Ingredients
- Couscous - 1 glass
- Water - 2 glasses
- Olive Oil - 2 spoons
- Chopped almonds - 1.1 oz
- Scallions - 2.5 oz
- Cilantro - 1.2 oz
- Fresh Mint - 1.2 oz
- Almond - 1 tablespoon
- Salt - to taste
- Meyer Lemon Juice - 1 tablespoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Pour the couscous into a bowl and cover it with 2 cups of boiling water. Cover and let it sit for about 10 minutes until softened.
Step 2
Meanwhile, heat olive oil in a small skillet over medium heat and add the almonds. Sauté, stirring, for 1 minute until golden brown.
Step 3
Transfer the couscous to a sieve and then back into a bowl. Add finely chopped onion, finely chopped herbs, almond oil, almonds with oil, lemon juice, 0.5 teaspoons of salt, and 0.25 teaspoons of black pepper. Season with salt and add more lemon juice to taste. Serve warm.
