Crab Gazpacho

Ingredients

  • Tomatoes - 28.2 oz
  • Spiced Tomato Juice - 13 fl oz
  • Malt Vinegar - 0 fl oz
  • Olive Oil - 4 tablespoons
  • TABASCO® - to taste
  • Cucumbers - 3 pieces
  • Mayonnaise - 1 tablespoon
  • Salt - to taste
  • Iceberg Lettuce - 2 heads
  • Ground Black Pepper - to taste
  • Crab Meat - 1.8 oz

Step by Step guide

Step 1

Peel the tomatoes (to make peeling easier, first blanch them, then cool the tomatoes). Cut into small pieces, add basil (it needs to be chopped). Place the tomatoes and basil in a blender along with the juice, vinegar, oil, salt, and pepper. Blend until it reaches a not too liquid consistency.

Step 2

Shred the crab meat into strands. Peel and chop the cucumber along with the lettuce. Dress everything with mayonnaise. Arrange the salad on a plate and pour the chilled soup around it.
