Crab Meat Appetizer with Wasabi Mayonnaise
Ingredients
- Sake - 1 tablespoon
- Salt - 1 tablespoon
- Crab Meat - 21.2 oz
- Chives - 16 stalks
- Daikon - 15.5 oz
- Watercress - to taste
- Mayonnaise - 1.8 oz
- Wasabi - 0.4 oz
Step by Step guide
Step 1
Bring water to a boil in a pot and add sake and salt. Wrap pieces of crab meat in cheesecloth and submerge in boiling water. Bring back to a boil and quickly transfer to a bowl of ice water. Then unwrap the cheesecloth.
Step 2
In a small bowl, mix mayonnaise and wasabi.
Step 3
Cut each piece of crab meat in half.
Step 4
Take 2 pieces of crab meat and tightly tie them with 4 pieces of chives. Place in a serving bowl. Repeat the same with the remaining meat.
Step 5
Garnish on top with mayonnaise, strips of daikon, and watercress.
