Cranberry Mousse with Semolina

Ingredients

  • Cranberry - 10.6 oz
  • Sugar - 8.8 oz
  • Semolina - 3.5 oz

Step by Step guide

Step 1

Mash the cranberries in a non-oxidizing container.

Step 2

Add 100 ml of boiled water to the mashed berries and squeeze out the juice.

Step 3

Pour water (300 ml) over the pulp, add sugar, and bring to a boil, then strain the broth and discard the boiled pulp.

Step 4

Add semolina to the strained broth and cook over low heat, stirring.

Step 5

It should turn into something like a thick porridge.

Step 6

When the porridge cools, add the juice and whip well. The mixture will lighten in color and increase in volume.

Step 7

Distribute the finished mousse into portion molds and place in the refrigerator. You can sprinkle it with grated chocolate and decorate with berries.
