Ingredients
- Fish Oil - 13 fl oz
- Crayfish - 4 pieces
- Fish - 2.1 oz
- White bread - 0.9 oz
- Cream - 1.1 oz
- Butter - 1.1 oz
- Chicken Egg - ½ piece
- Green peppercorns - to taste
- Bay leaf - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the crayfish, remove the tails and the meat from the claws.
Step 2
Prepare crayfish oil: dry the shells (except for the main shell), crush them, fry in butter, then pour the oil into a bowl with water, stir a little to let the shells settle at the bottom, and let it cool.
Step 3
Pass the flesh of pike perch, whitefish, pike, perch, burbot, or other fish through a meat grinder 2-3 times, add the meat from the claws, egg, melted butter, black peppercorns, bay leaf, salt, ground pepper, cream, and the bread soaked in water and squeezed. Mix everything thoroughly.
Step 4
Dry the crayfish shells, fill them with the fish filling, add the tails and crayfish oil, pour in the broth, and cook for 10 minutes.
