Ingredients
- Butter - 1.8 oz
- Celery stalk - 6 pieces
- Onion - 2 heads
- Wheat Flour - 1.8 oz
- Cider - 5 fl oz
- Blue Cheese - 8.8 oz
- Chicken Broth - 1 qt
- Milk - 25 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Cream - 1 fl oz
Step by Step guide
Step 1
In a pot, melt the butter and add finely chopped celery and onion. Sauté until soft, without letting them brown. Gradually stir in the flour and cook for 1 minute. Remove from heat and add the cider and broth. Return to heat, bring to a boil. Reduce heat and simmer for 20 minutes.
Step 2
Add the finely chopped cheese to the milk, stir, and pour everything into the soup. Bring to a boil, season with salt and pepper to taste, and transfer to a blender. Blend well and before serving, add the cream.
