- Salad Potatoes - 8.8 oz
- Shallot - 5.3 oz
- Chicken Broth - 8 fl oz
- Cream 22% - 10 fl oz
- Ground Black Pepper - to taste
- Paprika - to taste
- Wheat Flour - 1 tablespoon

Step 1
First, the snails need to be prepared. For this, they should be placed alive in a deep pot, add a glass of water, and cover the pot to allow them to cleanse their stomachs for three days. Then, after thoroughly washing them, boil them completely submerged in water with the addition of a bay leaf for 15 minutes or less. Drain the water, remove the snails, and use tweezers to extract them from their shells. Chop the snail meat finely with a large knife and set aside.
Step 2
In a pot, bring the chicken broth to a boil and cook the diced potatoes and chopped shallots until fully cooked. Then add the snail meat, black pepper, and cream, seasoned with lightly toasted flour. Bring everything to a boil.
Step 3
Before serving, sprinkle the soup with paprika — it looks very beautiful. I also like to top it with pieces of crispy bacon.
