Ingredients

  • Poultry - 12.3 oz
  • Broccoli - 10.6 oz
  • Carrot - 2 pieces
  • Onion - 1 piece
  • Potato - 3 pieces
  • Croutons - to taste
  • Grated Pecorino Pepato Cheese - to taste
  • Cream - 7 fl oz

Step by Step guide

Step 1

Thoroughly rinse the chicken, place it in a pot, and cover it with 1.5 liters of water. Bring to a boil, skim off any foam, and simmer on low heat for 35–40 minutes.

Step 2

Chop the onion and grate the carrot, then sauté the mixture in olive oil in a skillet until it turns a light golden color. Add salt and pepper.

Step 3

Remove the cooked chicken from the broth. Add broccoli and potatoes (cut the potatoes into cubes or sticks, and break the broccoli into several pieces) along with the sautéed mixture of onions and carrots to the broth. Cook the vegetables for 15 minutes. Add salt and pepper to taste.

Step 4

Cut the chicken into cubes; if desired, you can sauté them until golden brown.

Step 5

Once the vegetables are cooked, transfer the soup to a blender. After blending, pour the mixture back into a pot and set it over low heat, add the cream, and stir the soup for 5-7 minutes.

Step 6

Then add grated Parmesan cheese, croutons, and chicken to the plate.
