Ingredients
- Beef Kidneys - 14.1 oz
- Pork fat - 1.8 oz
- Chicken Broth - 1 qt
- Wheat Flour - 1.8 oz
- Chocolate eggs - 2 pieces
- Lemon - 1 piece
- Butter - 1.8 oz
- Leek - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Herbs - to taste
Step by Step guide
Step 1
Mash the lung, cut into pieces, and boil. Pass the lung through a meat grinder and sauté in melted pork fat.
Step 2
Beat the eggs and mix with the flour. Add salt and pepper. Combine with the minced lung and shape into dumplings.
Step 3
Sauté the flour with salt in butter.
Step 4
Bring the meat broth to a boil and dissolve the flour in it. Squeeze in lemon juice. Add the dumplings and cook until done. Add the leek, sliced into thin rings.
Step 5
Garnish with chopped herbs.
