Creamy Mushroom and Spinach Soup
Ingredients
- Pickled Chanterelles - 5.3 oz
- 10% cream - 2 fl oz
- Fresh basil leaves - 1.8 oz
- Chicken Broth - 3 fl oz
- Onion - 1 head
- Carrot - 1 piece
- Garlic - 1 clove
Step by Step guide
Step 1
Prepare a strong broth from chicken fillet.
Step 2
Chop the onion coarsely and sauté it in a mixture of butter and olive oil, add a little sugar, introduce finely chopped carrot, sauté for a bit, add the champignon mushrooms and garlic, season with salt and pepper, let it simmer on low heat for 10 minutes, stirring occasionally, add fresh spinach, sauté for 1 minute, remove from heat, transfer to a blender, add broth and blend thoroughly.
Step 3
Transfer the resulting mixture to a preheated water bath. Constantly stir and add the cream, cook for 7–10 minutes, garnish with cream and fried onions.
