- Champignons - 28.2 oz
- Potato - 4 pieces
- Carrot - 1 piece
- Onion - 1 piece
- Cream 22% - 3 spoons
- Butter - 2.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Bay leaf - to taste
- Green peppercorns - to taste
Step by Step guide
Step 1
Boil the potatoes with the mushrooms (do not chop the mushrooms!) in a small amount of water. While boiling, add a bay leaf, salt, and black peppercorns.
Step 2
To prepare the dressing, melt the butter in a saucepan, add the finely chopped onion and carrot, and sauté until just golden. Remove from heat. Blend everything with an immersion blender until smooth, then pour in the cream and the remaining butter from the saucepan.
Step 3
Blend the potatoes and mushrooms until smooth, then stir in the dressing and 1 cup of the potato and mushroom broth. Mix well once more. Add ground pepper to taste.
Step 4
Serve with sour cream and croutons, garnished with green onion tops.
