- Water - 1 qt
- Fresh Mushrooms - 14.1 oz
- Cream 22% - 8 fl oz
- Wheat Flour - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - a pinch
- Butter - 1.8 oz
- Croutons - 8 pieces
- Crackers - to taste
Step by Step guide
Step 1
Wash the mushrooms and cut them into small pieces, place them in a pot and cover with water. Bring to a boil and cook over medium heat for 25 minutes.
Step 2
In a saucepan, melt the butter and sauté the flour, stirring constantly for about 2 minutes.
Step 3
After the mushrooms are cooked, transfer the soup to a blender, add the mixture from the saucepan, and blend until smooth. Then return it to the pot. Add the cream, basil, season with salt and pepper, bring to a boil while stirring constantly, then remove from heat.
Step 4
Before serving the soup, rub the pre-fried croutons with garlic.
Step 5
Serve the soup with garlic croutons, garnished with a parsley leaf and a small amount of crackers.
