Creamy Onion Soup with Chanterelles
Ingredients
- Water - 2½ l
- Onion - 1½ kg
- Pickled Chanterelles - 7.1 oz
- Sliced Processed Cheese - 7.1 oz
- Cream - 7 fl oz
- Chili jam - 0.3 teaspoons
- Dried Chamomile - to taste
- Ground Black Pepper - to taste
- Salt - to taste
- Butter - 2 tablespoons
- Olive Oil - 2 tablespoons
Step by Step guide
Step 1
Peel and chop the onion, then sauté it in a pan with a mixture of vegetable and butter.
Step 2
Pour half the volume of water into a 5-liter pot and bring to a boil. Add the sautéed onion to the boiling water and cook for 10 minutes.
Step 3
Sauté the chanterelles in a pan until cooked, then add them to the soup. Season with salt, pepper, and thyme.
Step 4
Next, add the processed cheese and cream to the soup, melting the cheese. Adjust the taste with chili and salt, and you can add a pinch of sugar.
Step 5
Garnish when serving with fried and dried onion and parsley.
