Ingredients
- Frozen green bean pods - 21.2 oz
- Tapioca - 9.5 oz
- Butter - 5.3 oz
- Leek - 3.5 oz
- Shallot - 3 pieces
- Bouquet Garni - 1 bunch
- Chicken Broth - 1 qt
- Onion - 1.8 oz
- Sugar - a pinch
- Salt - to taste
- Ground Black Pepper - to taste
- Cream - 10 fl oz
- Pickled pearl onions - 16 pieces
- Semi-Smoked Sausage - 3.5 oz
Step by Step guide
Step 1
Thaw the peas (or shell fresh ones if in season).
Step 2
Rinse 150 grams of tapioca in cold water and dry it.
Step 3
Remove the skin from the bacon (preferably with the rind) and slice it thinly.
Step 4
Chop the leek, shallots, and onion, and sauté them in 100 grams of butter until soft.
Step 5
Add the peas and tapioca to the saucepan with the onions, and place the bouquet garni in. Sprinkle with a pinch of sugar and mix well.
Step 6
Pour in the chicken broth and add the bacon rind for flavor.
Step 7
Reduce the heat and let it simmer for about 25–30 minutes.
Step 8
When the peas are ready, remove the soup from the heat, take out the bouquet garni and the bacon rind. Strain the soup through a sieve using a wooden spoon or spatula for thorough pressing.
Step 9
Pour the soup into a clean pot, add the cream, and bring to a boil over medium heat. Cook the soup until the liquid evaporates to a creamy consistency. Season to taste.
Step 10
Meanwhile, melt 20 grams of butter in a skillet, add the peeled pearl onions, a generous pinch of sugar, and salt. Pour in enough water to completely cover the onions. Cover everything with oiled parchment paper. Cook on low heat until all the water evaporates, but the onions should not change color.
Step 11
When the onions are ready, remove them from the heat.
Step 12
In another skillet, melt 30 grams of butter, add 100 grams of peas, the glazed onions, and the chopped bacon (100 grams), mix and let it simmer for 5 minutes on low heat.
Step 13
Rinse 120 grams of tapioca and throw it into boiling water. Cook on high heat until ready. Drain and rinse.
Step 14
Place the mixture of onions, peas, and bacon in the center of each plate. Pour the creamy soup around it and garnish with pearls of tapioca.
