Creamy Pumpkin Ginger Soup
Ingredients
- Pumpkin - 2 lbs
- Salad Potatoes - 2 pieces
- Turnips - 2 pieces
- Onion - 1 piece
- Butter - 1.8 oz
- Olive Oil - 2 tablespoons
- Peeled Cooked Shrimp - to taste
- Grated Ginger Root - 1.8 oz
- Basil - to taste
- Parmesan Cheese - to taste
- Garlic - 3 cloves
- 10% cream - 7 fl oz
Step by Step guide
Step 1
Sauté the onion and grated carrot in butter.
Step 2
Peel and dice the pumpkin. Place it in a heavy-bottomed pot. Add olive oil. Sauté for 5–7 minutes. Add diced potatoes. Pour in hot water just to cover the vegetables.
Step 3
When the pumpkin is almost soft, add the carrot and onion mixture. Season with salt.
Step 4
Cook until the pumpkin and potatoes are completely soft.
Step 5
Add the cream. Cook for another 5 minutes. Add the grated garlic.
Step 6
Blend with an immersion blender.
Step 7
Add the grated ginger. Stir well.
Step 8
Pour the soup into a bowl, add shrimp, basil leaves, and slices of Parmesan cheese.
