- Lentils - 1 cup
- Pumpkin - 7.1 oz
- Onion - 1 piece
- Garlic - 3 cloves
- Salt - to taste
- Ginger - to taste
- Pasilla Pepper - to taste
- Olive Oil - 2 tablespoons
- Chicken Broth - 1 qt
Step by Step guide
Step 1
Finely chop the onion, garlic, and ginger. Cut the pumpkin into small cubes. Rinse the lentils.
Step 2
Heat a saucepan with olive oil. First, add the onion and sauté for 2–3 minutes, then add the garlic and ginger. Sauté for a few more minutes until the garlic starts to change color.
Step 3
Add the pumpkin and lentils, pour in the broth. Bring to a boil, reduce the heat, and simmer covered until the lentils are cooked, about 15 minutes.
Step 4
Blend the soup with an immersion blender until smooth. Season with pink pepper and serve.
