Description

This soup can also be served cold, but in that case, it's better to use ham instead of bacon.

Ingredients

  • Tomatoes - 33.5 oz
  • Garlic - 4 cloves
  • Spanish onions - 2 heads
  • Olive Oil - 1 tablespoon
  • Semi-Smoked Sausage - 6 pieces
  • Bouillon cube - 2 pieces
  • Balsamic Vinegar - 4 teaspoons

Step by Step guide

Step 1

Preheat the oven to 428°F. On a baking sheet, place the quartered tomatoes, thinly sliced onion, and finely chopped garlic. Drizzle with olive oil, season with salt and pepper, and place in the oven for 20 minutes until the vegetables are soft and slightly browned.

Step 2

On another baking sheet, place the finely chopped bacon and put it in the oven 15 minutes before the vegetables are done. Remove from the oven when the bacon pieces are crispy.

Step 3

Meanwhile, in a pot, combine 1 liter of hot water and the crumbled bouillon cubes. Bring to a boil and add the roasted vegetables. Blend with an immersion blender until smooth.

Step 4

Pour the soup into small bowls. Drizzle with balsamic vinegar and sprinkle with crispy bacon.
