Ingredients
- Onion - 1 head
- Celery salt - 2 pieces
- Water - 1 qt
- Carrot - 3.5 oz
- Spinach - 7.1 oz
- Butter - 3.5 oz
- Mixed salad greens - 3.5 oz
- Fresh Mushrooms - 1.8 oz
- Salt - to taste
- Vegetable Oil - 1 fl oz
- Ground Black Pepper - to taste
- 10% cream - 1 fl oz
Step by Step guide
Step 1
Chop the onion, mushrooms, carrot, celery, garlic, and green onion. In a deep saucepan, heat the butter along with the vegetable oil and add the vegetables. Stir and sauté until their combined aroma is felt.
Step 2
Add the mushrooms to the vegetables, season with salt, and add the green onion. Sauté everything together for a bit and pour in a small amount of water.
Step 3
Add the chopped spinach and the salad mix of chard, mizuna, and root.
Step 4
Once the greens are cooked down, use an immersion blender to puree the mixture of vegetables, mushrooms, and salads. Add the cream. Blend again.
