Ingredients
- Butter - 1 tablespoon
- Olive Oil - 1 tablespoon
- Fresh Mushrooms - 7.1 oz
- Leek - 1.2 oz
- Garlic - 1 clove
- Chicken Broth - ¼ cup
- 33% Cream - 1 tablespoon
- Salt - to taste
- Meyer Lemon Juice - 1 teaspoon
- Fresh basil leaves - 4.9 oz
- Grated Pecorino Pepato Cheese - 1.1 oz
Step by Step guide
Step 1
In a large skillet, heat the butter and olive oil over medium heat. Add the thinly sliced mushrooms and sauté for 3-4 minutes until the mushrooms begin to soften.
Step 2
Add the thinly sliced leek and minced garlic and sauté until soft for 3 minutes.
Step 3
Add the broth, cream, lemon juice, and lightly salt. Cook for 2 minutes.
Step 4
Add the spinach, reduce the heat, stir, and cook for another 2 minutes until the spinach wilts.
Step 5
Sprinkle with Parmesan, stir, and serve immediately.
