- Fresh basil leaves - 10.6 oz
- Shallot - 1 piece
- Garlic - 1 clove
- Butter - 1 tablespoon
- Wheat Flour - 1 tablespoon
- Cream 22% - 7 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Thoroughly wash the spinach leaves under cold water. Place the wet leaves directly into a deep skillet, pot, or wok over very low heat. Gently press the leaves down with your hand and cover with a lid.
Step 2
As soon as the spinach completely wilts to the bottom, carefully stir it with a spatula. Remove the spinach and place it in a colander lined with a paper towel. Let it dry slightly.
Step 3
Meanwhile, pour a couple of tablespoons of water into the skillet and add the finely chopped shallot and garlic. Stirring constantly, cook over low heat until they become translucent.
Step 4
Add the butter and mix thoroughly. Make sure the shallot and garlic do not start to brown.
Step 5
Add the flour and sauté until a nutty aroma begins to emanate from the skillet. Keep the heat very low.
Step 6
Pour in the cream and stir until smooth. Season with salt and pepper.
Step 7
Return the spinach to the skillet and continue stirring over the heat until it is fully warmed through.
