Creamy Wild Mushroom Soup
Ingredients
- Dried Chinese mushrooms - 1.1 oz
- Dried Chinese mushrooms - 1.1 oz
- Butter - 4 tablespoons
- Onion - 1 head
- Garlic - 3 cloves
- Fresh Mushrooms - 24.7 oz
- Madeira - ¼ cup
- Wheat Flour - 2 tablespoons
- Chopped Sage Leaves - 1 tablespoon
- Cream (40%) - ½ cup
- Coarse Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a bowl, combine the dried mushrooms and pour in 6 cups of boiling water. Let them soften for 15 minutes. Remove with a slotted spoon and chop finely. Strain the mushroom water through a sieve.
Step 2
Melt the butter in a large saucepan over medium heat. Add the finely chopped onion and minced garlic. Sauté for 5 minutes until soft. Then add the finely chopped fresh and dried mushrooms and sauté, stirring, until most of the liquid evaporates. Pour in the Madeira and let it evaporate for about 2 minutes. Then sprinkle with flour and mix well.
Step 3
Pour in the mushroom water and bring to a boil. Reduce the heat and simmer for about 30 minutes.
Step 4
Remove 1 cup of mushrooms with a slotted spoon and transfer to a bowl. Mix with parsley. Cover with foil and keep warm.
Step 5
Blend the remaining soup until smooth, then return it to the pot. Stir in the cream, season with salt and pepper.
Step 6
Serve by placing some mushrooms with parsley in each bowl.
