Ingredients

  • Cooked Ham - 8.1 oz
  • Chicken Egg - 4 pieces
  • Gruyère cheese - 7.1 oz
  • Butter - 5 teaspoons
  • White bread - 8 pieces
  • Milk - 15 fl oz
  • Wheat Flour - 3 spoons
  • Dijon Mustard - 4 spoons
  • Nutmeg - 0,1 teaspoons
  • Salt - to taste
  • White Pepper (whole) - to taste

Step by Step guide

Step 1

Melt three tablespoons of butter in a heavy saucepan over low heat, then add the flour and cook, stirring, for three minutes. Pour in the milk and bring it to a boil, continuing to stir. Reduce the heat, and after five minutes, add salt, pepper, grated nutmeg, and 50 grams of grated cheese. Once the Gruyère has melted, turn off the heat and cover the saucepan with wax paper.

Step 2

Spread mustard on four slices of bread, and top with thinly sliced ham. On another four slices, spread cheese sauce (about one and a half tablespoons per slice), sprinkle with the remaining grated cheese, and then cover with the sandwiches topped with mustard and ham.

Step 3

In a shallow skillet, melt a tablespoon of oil, and toast the sandwiches on both sides for three to four minutes until golden brown. Transfer them to a slightly greased baking sheet, using a paper towel to absorb any excess grease.

Step 4

Spread about a third of a cup of sauce over each sandwich and place them in a preheated oven at 356°F for a few minutes. When the sauce starts to bubble and turns golden brown, turn off the oven and move the baking sheet to the lower third of the oven.

Step 5

Heat the remaining butter in a skillet over medium heat. Once the foam subsides, crack the eggs into the skillet, season with salt and pepper, and fry them sunny-side up for about three minutes, until the whites are set but the yolks remain runny. Top each sandwich with a fried egg and serve immediately.
