Ingredients
- Eggplants - 1 piece
- Marinated cherries - 9 pieces
- Hard Cheese - 1.4 oz
- Feta cheese - 1.4 oz
- Parsley - 1 bunch
- Garlic - 1 clove
- Olive Oil - 1 tablespoon
- Salt - to taste
- Water - 10 fl oz
Step by Step guide
Step 1
Prepare all necessary ingredients.
Step 2
Crush the eggplant with a rolling pin or mallet until it feels soft.
Step 3
Make a cut along the entire length, without cutting all the way through.
Step 4
Salt the eggplant well inside and soak it in water for 15 minutes.
Step 5
Grate the hard cheese.
Step 6
Cut the cherry tomatoes into quarters.
Step 7
Add feta cheese and finely chopped herbs with garlic.
Step 8
Mix well.
Step 9
Drain the water from the eggplant and place it on foil.
Step 10
Fill the pocket with the stuffing.
Step 11
Cover with foil on top.

Bake in an oven preheated to 392°F for 40 minutes.

Transfer to a plate and drizzle with olive oil.
