Ingredients
- Onion - 2 pieces
- Black Tomatoes - 10.6 oz
- Orange Bell Peppers - 1 piece
- Celery stalk - 4 stalks
- Chicken Egg - 2 pieces
- Garlic - 5 cloves
- Parmesan Cheese - to taste
- Sour Cream - to taste
- Sugar - 1 teaspoon
- Spices - to taste
- Herbs - 1 bunch
Step by Step guide
Step 1
Soak 300 grams of black beans overnight or for a day in cold water, then drain and rinse the beans.
Step 2
Add the beans to 2 liters of boiling water and cook on low heat, covered, for 40 minutes.
Step 3
Dice the onion, slice the celery and bell pepper, and sauté everything in vegetable or olive oil for 10 minutes until soft.
Step 4
Add the finely chopped garlic, spices, salt, and a teaspoon of sugar, and sauté for another minute.
Step 5
Add the vegetable mixture to the beans and cook for another 20 minutes, until the beans are soft. Season with salt and pepper to taste.
Step 6
Boil the eggs and chop the herbs.
Step 7
Purée the soup in a blender.
Step 8
Serve the soup in a bowl, sprinkle with grated Parmesan or another hard cheese, add chopped herbs, and top with a halved or grated boiled egg. Garnish with sour cream.
