Cucumber and Watercress Sandwich

Ingredients

  • Salt - to taste
  • Cucumbers - 4.4 oz
  • Watercress - ½ bunch
  • Mayonnaise - 1 tablespoon
  • Butter - 1.1 oz
  • White bread - 8 slices

Step by Step guide

Step 1

Slice 16 thin pieces of cucumber for decoration.

Step 2

Wrap them in plastic wrap and place in the refrigerator.

Step 3

Peel the cucumbers. Slice them into thin rounds. In a small bowl, mix the cucumber pieces with salt and let sit for 30 minutes, stirring occasionally.

Step 4

Remove the stems from the watercress. Set aside 16 small leaves for decoration. Wrap them in plastic wrap and place in the refrigerator. Finely chop the remaining leaves and mix them with mayonnaise.

Step 5

Trim the crusts off the bread. Spread butter on one side of each slice.

Step 6

Squeeze the salted cucumber slices by hand. Pat dry.

Step 7

Spread the watercress mixture on 4 slices of bread. Top with cucumber slices, then place the remaining bread on top, and cut each sandwich into four diagonal pieces.

Step 8

Before serving, garnish with cucumbers and watercress.
