Ingredients
- Shrimp - 3.5 oz
- Courgette - 1 piece
- Tomatoes - 4 pieces
- Bacon - 1.8 oz
- Onion - 1 head
- Garlic - 2 cloves
- Butter - 2 tablespoons
- Chicken Broth - 13 fl oz
- Meyer Lemon Juice - 2 tablespoons
- Dill - 2 tablespoons
- Croutons - 0.4 oz
- White Pepper (whole) - to taste
- Salt - to taste
Step by Step guide
Step 1
Peel the cucumber, cut it in half lengthwise, scoop out the seeds with a teaspoon, and dice the flesh into small cubes.
Step 2
Pour boiling water over the tomatoes, peel off the skin, cut them in half, remove the seeds and stems, and chop coarsely.
Step 3
Cut the bacon into thin strips.
Step 4
Finely chop the onion and garlic.
Step 5
Drain the juice from the shrimp.
Step 6
In a small pot, melt the butter.
Step 7
Sauté the bacon, onion, and garlic in it for 3 minutes.
Step 8
Add the cucumber and tomatoes, and sauté for another 2 minutes.
Step 9
Pour in the vegetable broth and 250 ml of water, add salt, pepper, lemon juice, and cook for another 5 minutes.
Step 10
Add the dill and shrimp to the soup, and let it simmer on the stove for another 5 minutes.
Step 11
Add the croutons to the soup and serve.
