Ingredients
- Walnuts - 2.1 oz
- Parsley - 0.5 oz
- Courgette - 1 piece
- Garlic - 1 clove
- Olive Oil - 2 tablespoons
- Water - 4 tablespoons
- Meyer Lemon Juice - 1 tablespoon
- Salt - a pinch
- Natural Yogurt - 10 fl oz
- Ground Black Pepper - to taste
- Fresh Mint - to taste
Step by Step guide
Step 1
Peel the cucumber, cut it in half, scoop out the seeds with a spoon, and dice the flesh. In a food processor, combine the walnuts, parsley leaves, garlic, oil, water, and half of the cucumber, and blend. Add the second half of the cucumber, salt, and lemon juice, and blend again.
Step 2
Transfer the puree to a bowl, add the yogurt. Season to taste, adding more lemon juice if necessary. Chill in the refrigerator for at least 30 minutes. Serve garnished with mint leaves.
