A strong, fragrant brine filled with an abundance of herbs (including currant, tarragon, and cherry) and crunchy cucumbers. A recipe from a popular American restaurant.
Ingredients
- Cucumbers - 4 lbs
- Dill - 3 pieces
- Black Currant Leaves - 2 pieces
- Cherry - 2 pieces
- Horseradish Leaves - 2 pieces
- Horseradish Leaves - 1.1 oz
- Garlic - 5 cloves
- Tarragon - 1 stalk
- Bay leaf - 2 pieces
- Green peppercorns - 5 pieces
- Water - 1½ l
- Salt - 2.1 oz
- Sugar - 0.7 oz
Step by Step guide
Step 1
To ensure the cucumbers are crispy, pierce them in several places with a toothpick and soak them in very cold water for 1 to 2 hours.
Step 2
Place dill umbrellas, blackcurrant leaves, cherry leaves, horseradish, sliced horseradish root, garlic cloves, and tarragon at the bottom of the jar. Pack the cucumbers tightly on top, then cover with another layer of horseradish leaves and bay leaves. Add whole peppercorns and pour cold brine over everything.
Step 3
Dissolve salt and sugar in cold water for the brine.
Step 4
Place the cucumbers in a dark, warm spot for two days. Then, transfer them to the refrigerator.
