Description
It is important to use white daikon, as yellow has a sharper taste and the result may be slightly different; you can use daikon instead of turnip.
Ingredients
- Garlic Scapes - 4 pieces
- Daikon - 2 pieces
- Chili Flakes - to taste
- Chopped Sage Leaves - 3 tablespoons
- Lemon - ½ piece
- Olive Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Parmesan Cheese - 1.8 oz
Step by Step guide
Step 1
Slice the peeled white daikon into thin pieces using a food processor, mandoline, or grater.
Step 2
Arrange on a serving plate. Sprinkle with finely chopped parsley and green garlic scapes (can be substituted with green onions) and chili flakes to taste.
Step 3
For the dressing, mix the juice of ½ lemon and 30 ml of olive oil with salt and pepper; truffle oil works great if available.
Step 4
20-30 minutes before serving, drizzle the daikon and greens with the dressing and place in the refrigerator.
Step 5
Before serving, sprinkle with grated Parmesan cheese in large but thin pieces (these can be obtained using a vegetable peeler).
