Ingredients

  • Onion - 8 pieces
  • Vegetable Oil - 6 tablespoons
  • Garlic - 6 cloves
  • Grated Ginger Root - 2 teaspoons
  • Chicken Broth - 8 fl oz
  • Baking Tomatoes - 14.1 oz
  • Poultry - 3 lbs
  • Cardamom - to taste
  • Turmeric - ½ teaspoon
  • Cinnamon - a pinch
  • Ground clove - a pinch
  • Nutmeg - a pinch
  • Cayenne Pepper - to taste
  • Salt - to taste
  • Farm fresh eggs - 4 pieces
  • Ground Black Pepper - to taste
  • Ground coriander - to taste

Step by Step guide

Step 1

Heat the oil in a pot, add the onion, and cook for 10 minutes until soft. Add the garlic and ginger and cook for 1-2 minutes.

Step 2

Add the broth with the tomato puree or canned tomatoes to the pot. Bring to a boil, stirring, for about 10 minutes, or until the liquid reduces and thickens. Season with salt and pepper.

Step 3

Add the chicken and spices to the pot, coating the chicken in the sauce. Reduce the heat, cover, and cook, stirring, for about 1 hour, until the chicken is cooked through. Add a little more liquid if the mixture seems too thick.

Step 4

Peel the eggs and poke them with a fork one or two times. Add the eggs to the sauce and warm the mixture.

Step 5

Garnish with cilantro and onion and serve with injera, flatbreads, or rice.
