Dovga with Greens and Chickpeas
Ingredients
- Tarragon - 1 bunch
- Buttermilk - 2 qt
- Chickpea - 1 cup
- Chocolate eggs - 4 pieces
- Water - 3 cups
- Rice - 3.5 oz
- Garlic - 3 cloves
- Ground Cumin - 0.2 oz
- Dill - 2 bunches
- Parsley - 2 bunches
- Cilantro - 2 bunches
- Scallions - 1 bunch
- Salt - to taste
Step by Step guide
Step 1
Soak the chickpeas for about 8 hours, then boil them.
Step 2
Wash and finely chop all the greens.
Step 3
Lightly toast the cumin in a pan and grind it in a mortar.
Step 4
Pour water into the buttermilk, add the eggs, mix, and place over low heat. Add the rice. Heat while stirring almost to boiling, but do not boil. Cook while stirring until the rice is done.
Step 5
Add the boiled chickpeas, cumin, salt, chopped garlic, and all the greens. Mix, remove from heat, and let it steep for about five minutes.
Step 6
Serve hot or chilled.
