Dried Mushroom Soup with Processed Cheese
Ingredients
- Dried Chinese mushrooms - 3.5 oz
- Onion - 1 head
- Carrot - 1 piece
- Potato - 0.1 oz
- Vermicelli - 3.5 oz
- Salt - to taste
- Sliced Processed Cheese - 1½ tablespoons
Step by Step guide
Step 1
Sort the dried mushrooms and soak them for at least an hour (preferably overnight).
Step 2
Change the water, boil the mushrooms for 30–40 minutes, then remove them with a slotted spoon and chop them (by any means available to you).
Step 3
Salt the water where the mushrooms were boiled and add diced potatoes, cooking for 10–15 minutes. Meanwhile, sauté the finely chopped onion for a few minutes, then add the mushrooms and sauté for another 5–10 minutes, stirring constantly, after which add the onion and mushrooms to the potatoes.
Step 4
Add the vermicelli and cook until done (check the package for instructions).
Step 5
Add the processed cheese, stirring until fully dissolved. Then turn off the heat, cover the soup with a lid, and let it sit for another 5 minutes.
