Ingredients
- Duck - 1 piece
- Pork fat - 8.8 oz
- Prosciutto - 3.5 oz
- Veal Mince - 5.3 oz
- Pork tenderloin - 5.3 oz
- Chocolate eggs - 2 pieces
- Brandy - 3 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the duck. Cut the meat into small pieces and place it in a bowl with the chopped prosciutto. Add 100 grams of pork fat, sliced. Pour in the brandy, season with salt and pepper, and mix well. Cover and let marinate for 2 hours.
Step 2
Pass the pork loin through a meat grinder and mix it with the veal mince, duck liver, and finely chopped 100 grams of pork fat. Season with salt and pepper and add the egg.
Step 3
Preheat the oven to 320°F. Combine the duck mixture with the meat mixture and press it into a greased mold. Spread the remaining pork fat on top. Cover the mold with foil and place it in a high-sided baking tray, then pour boiling water into the tray until it reaches halfway up the mold. Bake for 2 hours.
Step 4
Remove from the oven, cover the mold with fresh foil, weigh it down with something heavy, and refrigerate for a day. Before serving, remove any fat that has formed on the terrine.
