Ingredients
- Cream - 7 fl oz
- Chicken Broth - 17 fl oz
- Butter - 1.8 oz
- Onion - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
- Chopped Sage Leaves - 1.8 oz
- Orange Bell Peppers - 2 pieces
Step by Step guide
Step 1
Thoroughly rinse the bell peppers, herbs, and leek. Finely chop the herbs, dice the onion, and remove the seeds from the bell peppers, slicing them into thin strips.
Step 2
In a saucepan, melt the butter and add the finely chopped onion, sautéing until golden. Add the thin strips of bell pepper, mix, and sauté over low heat for at least 10 minutes, cover, and cook for another 5 minutes.
Step 3
Remove from heat and let cool. In a separate pot, add 500 ml of broth, bring to a boil, and season with salt and pepper to taste.
Step 4
In a blender, combine the sautéed onion and bell pepper mixture. Blend until thick and smooth. Strain through a sieve. Add the strained pulp to the boiling broth. Cook in boiling water for 5 minutes, then add the finely chopped leek.
Step 5
Remove from heat, let cool slightly, and add 200 ml of cream, mix, and garnish with herbs.
