Description

DzaVar is a grain made from slightly boiled and then dried seeds. It is a special type of mountain wheat from which a variety of interesting dishes can be prepared.

Ingredients

  • Round-grain wheat (DzaVar) - 7.1 oz
  • 35% Cream - 7 fl oz
  • Thyme - 0 oz
  • Rosemary - 0 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Cayenne Pepper - 0 oz
  • Nutmeg - to taste
  • Onion - 2 heads
  • Fresh Mushrooms - 7.1 oz
  • Olive Oil - 2 fl oz
  • Hemp Seeds - 1.8 oz
  • Mint - 0 oz
  • Sun-Dried Tomatoes - 1.8 oz

Step by Step guide

Step 1

Rinse the DzaVar and cook until ready, then drain in a sieve.

Step 2

In a saucepan with a small amount of olive oil, sauté the finely chopped onion, add spices and nutmeg to taste, the chopped mushrooms, and the DzaVar. Mint can also be added for an interesting flavor.

Step 3

Pour in the cream and let it simmer until thickened. If you prefer a less thick consistency, you can add a bit of vegetable broth.

Step 4

When serving, you can sprinkle the risotto with roasted hemp seeds and finely chopped sun-dried tomatoes.
