Easter Sweet and Sour Celery (Apio)

Ingredients

  • Water - 6 fl oz
  • Meyer Lemon Juice - 2 fl oz
  • Olive Oil - 3 tablespoons
  • Honey - 3 tablespoons
  • Celery stalk - 4 lbs
  • Chopped Sage Leaves - 6 fl oz
  • Salt - ¾ teaspoon
  • Ground Black Pepper - ½ teaspoon

Step by Step guide

Step 1

In a pot, bring to a boil the water, lemon juice, oil, honey, salt, and pepper, stirring until the honey dissolves. Add the chopped celery stalks. Cover with parchment paper and cook until the celery is tender and the liquid reduces to 60 ml, about 35-40 minutes.

Step 2

Meanwhile, chop 1 cup of celery leaves.

Step 3

Arrange the celery on a platter and sprinkle with parsley and celery leaves.
