- Butter - 2.6 oz
- Salt - to taste
- Smoked Salmon Flavored Croutons - 3.5 oz
- Farm fresh eggs - 2 pieces
- Semi-soft cream cheese - 7.1 oz
- Herbs - 1 bunch
Step by Step guide
Step 1
Preheat the oven to 410°F.
Step 2
Bring 250 ml of water to a boil, add butter, salt, sugar, and stir until fully dissolved. Then add the flour and cook for 5 minutes while stirring continuously. Cool the dough to 60–158°F and gradually incorporate the eggs, whisking until smooth. Spoon the prepared dough onto a lightly greased and floured baking sheet.
Step 3
Bake the eclairs for 20–25 minutes, then reduce the heat to 212°F and dry them out to prevent the dough from collapsing.
Step 4
Prepare the cheese filling by blending the cream cheese with finely chopped salmon and herbs.
Step 5
Cut the eclairs in half and fill them with the filling.
