Ingredients
- Edamame Beans - 10.6 oz
- Soy Sauce - 0 fl oz
- Kombu Seaweed - 0.4 oz
- Bonito flakes - 0.4 oz
- Miso Paste - 1.1 oz
- Scallops - 4.2 oz
- Scallions - to taste
- Salt - 0.1 oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Boil the edamame beans for 3–5 minutes. Then drain all the water.
Step 3
Blend the beans with salt and soy sauce until it reaches a paste consistency.
Step 4
Soak the kombu seaweed sheets in 200 ml of water for a short time.
Step 5
Place the water with kombu on low heat, and before the water boils, remove the kombu and add the bonito flakes, cooking for 10 seconds, then turn off the heat.
Step 6
Once the flakes settle, strain the broth.
Step 7
Add the edamame paste and miso paste to the broth.
Step 8
Stir and bring to a boil.
Step 9
Cut the shrimp into large pieces.
Step 10
Pour the soup into bowls, add the shrimp, and garnish with green onion tops.
